I read somewhere once about a few ingredients that chef Tom Collicchio always has on hand in his kitchen for impromptu late night munchies or quick throw-together meals.
I can’t remember the entire list, but I know that Prosciutto and a wedge of good Parmesean cheese were on the list.
In addition to the man looking remarkably like Cal Ripken Jr, I realized I liked chef Collicchio even more.
My lunch yesterday was so pretty I had to take a picture of it. And it reminded me of Chef Collicchio’s list. With just a few things on hand, mostly leftover from our Wednesday Summer Solstice feast, I made a fantastic summer salad.
Prosciutto, Burrata, and Heirloom Tomatoes over Spinach and Wild Arugula tossed with a simple Balsamic Vinaigrette.
Ah, summer. Does it get any better than this?
